Here is an easy, festive scone recipe for your holiday brunch.  No matter what you celebrate… for the holidays, you really can’t beat scones!

Cranberry, White Chocolate, Pistachio Scones

1 3/4 cups flour

1/4 cup sugar

2 1/2 tsp baking powder

1/2 tsp salt

1/4 tsp nutmeg

5 tbsp cold unsalted butter, cut in pieces

6 tbsp buttermilk

1 tsp vanilla extract

1 large egg, beaten

1/2 cup fresh/frozen cranberries  (can use dried cranberries, but I prefer fresh) coated with 2 tsp sugar

1/2 cup white chocolate pieces

1/4 cup chopped pistachios, plus more for dusting

1 egg yolk mixed with 1 tbsp buttermilk

Blend first 5 ingredients, flour through nutmeg. cut in butter with pastry blender, until dough forms crumbs. add rest of ingredients, and stir until dough just holds together.  Turn dough onto floured cutting board, pat into round and cut into 8 wedges.  Brush  tops with egg yolk mixture, dust with pistachios.  Place on greased cookie sheet, and bake  at 400 degrees in preheated oven for about 15 minutes, until cake tester or toothpick inserted in center comes out clean. you can also use a scone pan, spray with cooking spray, and press dough into each wedge of pan.  Serve warm, or cool with tea and your favorite jam. These scones also freeze well.
