This easy, quick, four ingredient chicken is to die for!!  Make it for a quick weeknight meal or,  for whenever you are pressed for time… which let’s face it, is more often than not.  This is a tasty no brainer! Make it in a stove to oven proof skillet for easier clean up.  I used a cast iron skillet and it was perfect…


8 chicken thighs (bone in or boneless, I used boneless)

salt and pepper to taste

lemon juice

For the Glaze:

1/4 cup honey/agave sweetener /maple syrup – your choice!

1/4 cup lemon juice

1 tsp turmeric

1/2 tsp curry powder

Preheat oven to 400 degrees.  Mix ingredients for glaze.  Set aside.   If using cast iron skillet, place in oven to warm, while oven preheats.  Meanwhile, salt and pepper chicken, squeeze 1/2 lemon over chicken and let marinate and set in refrigerator for 30 minutes while oven preheats, and skillet warms.  Carefully take skillet out of oven, spray with canola oil,  add chicken,  baste on both sides with marinade, brown chicken thighs on both sides, about 3 minutes each side .  Baste chicken again on both sides, place in oven for 30 minutes, baste again at 10 minutes, and 20 minutes, then add rest of marinade to chicken to cook for last 10 minutes.  The glaze will thicken.  Remove from oven and serve. Finger lickin good!!!
